Abstract

Stunting masih menjadi tantangan gizi yang serius di wilayah pedesaan, termasuk di Desa Irat, Kabupaten Bangka Selatan, yang disebabkan oleh rendahnya asupan protein rumah tangga serta terbatasnya pemanfaatan sumber pangan lokal bergizi. Kondisi ini menunjukkan pentingnya intervensi berbasis masyarakat yang tidak hanya meningkatkan pengetahuan gizi, tetapi juga mendorong inovasi pangan lokal yang berkelanjutan. Program pengabdian kepada masyarakat ini bertujuan untuk meningkatkan literasi gizi ibu serta mengembangkan keterampilan dalam mengolah jamur sawit kukur (jamur tiram yang dibudidayakan pada limbah sawit) sebagai sumber protein alternatif sekaligus mendukung kewirausahaan rumah tangga. Program ini menggunakan pendekatan Participatory Rural Appraisal (PRA) dengan melibatkan 20 ibu melalui kegiatan edukasi gizi, penyuluhan stunting, serta pelatihan praktik pengolahan pangan berbasis jamur. Peserta mengikuti dua sesi edukasi dan satu lokakarya praktik, dengan menghasilkan berbagai produk seperti jamur crispy, keripik jamur, dan kemplang jamur. Hasil kegiatan menunjukkan adanya peningkatan pemahaman terkait gizi keluarga, pencegahan stunting, serta pemanfaatan pangan lokal. Keterampilan peserta dalam mengolah produk jamur yang aman dan bernilai tambah juga meningkat. Selain itu, beberapa peserta menyatakan minat untuk memulai usaha rumahan. Secara keseluruhan, program ini berkontribusi dalam memperkuat ketahanan pangan rumah tangga, mengoptimalkan potensi lokal, dan mendorong pemberdayaan ekonomi masyarakat.
