PENGETAHUAN IBU DALAM MENGOLAH PANGAN LOKAL UNTUK BALITA DI ASMAT: LITERATURE REVIEW

Masalah gizi buruk dan stunting masih menjadi kendala utama dalam pembangunan kesehatan anak di Indonesia, terutama di daerah tertinggal seperti Kabupaten Asmat, Papua. Penelitian ini bertujuan untuk mengkaji pengetahuan ibu dalam pengolahan pangan lokal untuk pemberian makanan tambahan bagi balita di Asmat, serta faktor-faktor yang mempengaruhinya. Pendekatan penelitian yang digunakan adalah studi literatur dengan metode review kualitatif dan analisis tematik dari artikel ilmiah terbaru periode 2019–2024. Data dikumpulkan melalui pencarian sumber dari database nasional dan internasional, kemudian dianalisis secara deskriptif dan tematik untuk mengidentifikasi pola-pola yang muncul berkaitan pengetahuan ibu dan praktik pengolahan pangan lokal. Hasil penelitian menunjukkan bahwa pengetahuan teknis dan informasi tentang kandungan nutrisi pangan lokal masih terbatas di kalangan ibu, yang berdampak pada teknik pengolahan dan penyajian makanan yang kurang optimal, meskipun pangan lokal seperti ubi dan daun kelor memiliki potensi untuk meningkatkan status gizi anak. Selain itu, faktor sosial budaya dan kepercayaan tradisional turut mempengaruhi praktik pemberian makan, sehingga intervensi edukatif berbasis budaya lokal diperlukan untuk meningkatkan pengetahuan dan keterampilan ibu. Hasil ini menegaskan pentingnya pemberdayaan ibu melalui pelatihan pengolahan pangan lokal yang kontekstual sebagai strategi pencegahan stunting di daerah tertinggal seperti Asmat.References
