Analisis Besar Porsi dan Biaya Daging Ayam Terhadap Standar di Instalasi Gizi Rumah Sakit Umum Pusat Dr. Mohammad Hoesin Palembang

Standar porsi adalah rincian macam dan jumlah bahan makanan dalam berat bersih untuk setiap jenis hidangan. Penelitian ini bertujuan untuk menganalisis kesesuaian berat porsi daging ayam dengan standar porsi dan analisis ketepatan biaya dari berat daging ayam. Penelitian ini merupakan penelitian kuantitatif dengan metode observasional deskriptif analitik dengan pendekatan crossectional. Populasi dalam penelitian ini menggunakan total sampling yakni seluruh daging ayam yang diterima berdasarkan siklus menu di Instalasi Gizi RSUP Dr. Mohammad Hoesin Palembang. Pengambilan data didapatkan dari hasil penimbangan daging ayam mentah menggunakan timbangan digital. Total hasil penimbangan sebanyak 3 kali didapatkan berat daging ayam yang termasuk kategori sesuai sebesar 79,6% dan kategori tidak sesuai sebesar 20,4%. Total biaya daging ayam yang seharusnya dikeluarkan untuk satu kilogram daging ayam sebesar Rp. 35.820,-/kg berdasarkan persentase ketepatan daging ayam dengan standar porsi.Downloads
